Big 33's and the all-rounder

The 338 caliber of any persuasion would certainly be an excellent candidate for the all round rifle. If you hand load and don't mind a little more cost for ammo and like something a little different, the 338 Lapua would be great. I wish I still had mine. The Sako 995 is still available and can be found on Guns America or Gun Broker at reasonable prices. I don't like the Ultra Mags or Remington rifles so that is never an option for me. If you want a good custom at reasonable price Montana Rifle Works will build a good one. Also, I think I mentioned the Long Bow by Dakota.
As far as renting a rifle, especially one you described, will be hard to find. You can probably find some one with an Ultra to shoot if you buy the ammo, pay the range fees, etc. You can always buy a used rifle just to try it then sell it when you are through testing. I've done it over 500 times. And it probably won't cost you more than 50 bucks, so in a way it is like renting. If you buy new you may have to take that depreciation, but still a rental of sorts.
