I drove the Alaska Highway twice in early May this last summer.  I found many of the Canadian lakes to be still frozen, but all of the flowing waters were open.  I didn't have time to stop and fish however.  

Alaska does indeed have some fishing opportunities in May.  The lakes will be typically ice free no later than the end of the first week of May (in SouthCentral; i.e. Anchorage, MatSu Valley and Kenai Peninsula) except for maybe some mountain lakes.  This makes for some great still water fishing.

I am most familiar with the Kenai Peninsula, so here is some info:

The King Salmon will be starting their return into the Kenai and Kasilof (world record King caught on May 17!). Though fishing for Rainbow trout on the Kenai river doesn't open until June, fishing for Dolly Varden is open in May.  This includes the area from the mouth of the river up to Skilak Lake.  There are several campgrounds and fishing areas that are road accessible and fishable from the shore.

The Anchor River will open (I expect) May 20-22 and again May 27-29, but will no doubt be crowded.  Ninilchik and Deep Creek will open May 27-29.  The Kasilof River will be open however will be restricted to single, unbaited hook until May 15.

If you can swing it, a fly-out to the Bristol Bay area will be well worth your hard earned cash.  Their salmon fishing should be getting a good start towards the end of May (not too expensive to fly from Anchorage to either King Salmon or Dillingham.  I have often flown into Illiamna and fished the NewHalen river (walking distance from the airport) in early June and done quite well for salmon and trout.

Now, in June on the Kenai Peninsula, things start to really heat up...  The first run of sockeye will reach the Russian River, the kings will be in the Kasilof really good and the Kenai will be going quite well.  The lakes will be warming with bug hatches getting the fish into a feeding frenzie and the flowing waters (small tributaries) will open to fishing (usually a great time to fish).
