My vote is for breathables, but invest in wader liners.  Personally I don't notice how cold the water is until it's time to step out of the stream and my joints refuse to work.

As far as wading shoe soles, I guess it depends on the stream bottom.  Felt soles are best unless you're mucking around in glacial silt, then they function very well as skates.
