one more time:

dry rubs and rinsing is asking for trouble; no way
to get a consistent product out of it.

a brine consists of dissolved salt and sugar; if it
isn't dissolved, it doesn't do anything

too much fish in too little brine is trouble;

the one guy who entered 12 quarts water to 1-1/3 cups salt isn't brining his fish at all (you would need 3 times that amount of salt). has to be a typo.  that won't work.

what is with this rinsing of brined fish in water (or worse, running water over the fish for longer periods)?  Huh? people with low tolerances for salt, I guess.
