I don't know who advised you to go air cooled over liquid but they may not realize the power difference between the two.  I have had both an Indy trail 500 (air cooled) and an Indy 500 SKS (liquid).  There is no comparison on how much more noticeable power the liquid has over the air.  These were both the 488 engine as well.  The air typically gets a little better mileage and is a little lighter but the power is something to consider.  Right now I'm riding a 700 RMK 136 x 1 3/4" and it does quite well both in powder and in the bumps.  I weigh in around 250 without my gear and it hauls me around to places I shouldn't be going just fine.  You might take a look at the Polaris Switchback.  I haven't ridden one but they are supposed to be a dual purpose type sled.

My 2 cents.
