Gus,
In short those machines are completely broken down and carefully put back together.  All the top riders are very familiar with "weak" spots for their machines in the tunnels, bellies, etc. and reinforce those areas.  When putting back together every screw, bolt, etc is put back on with loc-tite.  The competitors run all the popular cc machines.  Many opt for the 700cc as they feel it is the best compromise for power/fuel consumption.  Opinions are varied on suspension and set-up, but many do swap out the standard suspension on the sleds for one that suits their riding styles.
This being said EVERY racer has something break on their sled during the race.  The top racers can not only ride quite fast but can repair damage in short time...not too mention have to have some luck along the way.
