"we'd like to know the "informal" rules around being armed in Alaska."  Basically you have the right to carry a firearm for protection from bears, hiking, camping and outdoor activities.  No one will say anything and there is no firearm registration in AK. Any legal firearm is allowed.

"armed hikers would draw some strange reactions" Not in Alaska, maybe on the park trails in Anchorage but otherwise no. Unarmed hikers are usually tourists.

"Will we being seeing housewives with .44's in the movie theatre?"
No, they usually do concelled carry.

"Do we even need to bring a firearm?" Probably not unless you are walking down salmon streams in the fall. Where most tourists go, no.
Where I go I usually do, but not always. Might be a good idea though since you have no idea of where you will be.

".458 Lott or a shotgun" A shotgun with slugs will do, a .458 might be desireable if your walking the salmon streams. You will have to register the firearm crossing the border, about $38 American.

"have a .45 auto" Can't bring it through Canada unless going to a registered pistol match. Don't do it unless you want to meet undesireable Canadians in small rooms, aka cells.

"We have people down here who believe large Brown bears will crash into your hotel room in downtown Anchorage"  Hardly, they posted "No Bears Allowed in City Limits" signs everywhere. The police fine them pretty good.;D

"and that just about everyone keeps their guns within reach." Not really but somewhere in the house there are enough guns to fight off a company of invading Russians. At least in my place they are tools and treated as such. It is not so much keeping them handy but I often carry one, yes it is usually handy.
