We have used dry bags (NRS brand) to keep boned out meat in on several hunts - We have had meat submerged in water for up to a week. (I believe this helps minimize the presence of scent, too)  The water chilled the meat quite well and it came home in great shape.  Submerging the meat 'temporarily' to cool it off won't hurt it either (in dry bags/plastic garbage bags).
