As a few other people have mentioned, the quality of bear meat depends on what the bear has been eating. I personally don't do much spring bear hunting, although spring bear meat is generally pretty good. I do most of my bear hunting in the summer and early fall up in the blueberry patches. Any bear that has been eating berries will taste fine. On the other hand, if they have been eating fish you might as well just figure you're hunting for a rug.
