Have done a few shorter hunts with 3 people on a 14 footer, seems you could be cramped.  However are you going to de-bone the meat?  Freezedried meals such as mountain house works well to.  If people are able to go sheep hunting for 10-12 days with 40-60 lb. packs you should be able to manage.  Might not be as comforable though.  Sounds fun good luck
