I'm doing the same hunt, leaving on Aug. 14th.  Check the forum archives on here.  I've spent many hours reading through them, and still haven't read everything that's been posted.  You'll be able to answer most of your questions there, and find some things that you may not have considered.

In short, though:  Go north of the Brooks Range, as the caribou usually don't head south until later in the fall.  From what I've read, there seems to be little difference in going east or west of the highway.  (Though I'm up for corrections if I'm wrong!)  As for the walking, it's flat, but it's sometimes wet, marshy ground and is covered with hummocks, tussocks, or whatever you call them.  Basically, there are lots of little humps on the ground on which it is easy to roll an ankle.
