I had a bear hit a bait two years ago.  He was so secretive about it.  He moved just enough debris that he could steal a donut or two.  I wasn't sure what was hitting it so I mixed up a batch of grease and poured it in front and sure enough ... a bear print was evident the next time.  I've noticed bears can have different personalities depending on hunting pressure, etc.  
At the same time, squirrels and ravens can steal 'lots' of bait.  I've watched squirrels climb in my barrel and step out with a huge muffin.  In fact the squirrel made about 5 trips before I had to scare him out of there.
