I'll toss my hat in the ring for Indian Valley Meats.  I've dealt with them and with Alaska Sausage and both are good, but I don't think Alaska Sausage will guarantee you'll get your own burger back.  Maybe a minor point, as they're really picky about what they let in the door, but still... if I go to a lot of trouble taking good care of my meat, I want MY stuff back; not somebody else's that got tossed in the same grinder with mine.  Just my .02.

I second your idea of NOT processing it on a tarp in your apartment, btw!  Might raise a few suspicions from nosy neighbors.  "There are strange things done in the Midnight Sun..."
