As soon as I decide to keep a fish, I wack it on the head and cut the gill arches to let it bleed out. Then I usually build a rock crib at the edge of the water, if possible, and let the fish lay in there in the cold water with fresh water entering and exiting. I gut the fish if I intend to stay much longer.
I would not advise keeping fish if bears are actually watching you fish. Either watch the bears, or move and fish somewhere else. JMO, Kid
