Mix 1/4 cup salt, 1 cup white sugar, 1 cup of brown sugar and 1/2 cup of honey to 1 gallon of water. Let brine 12 hours, pat dry and let air dry for 1 hour. I try and use pieces that are no more than 1 inch thick and smoked them for about 6-8 hours. You can mix the smoked salmon with cream cheese and some green onion, makes a killer dip on crackers.
