not real sweet....

I don't know if "sweet" and "salmon" are but an oxymoron, but I have done this and like it. After soaking the fish in brine and air drying them with a fan, I cover them lavishly with maple syrup, let it get tacky, then maybe re-apply, and smoke. I like it. May not be sweet enough for you. j
