Well, I got a good answer to my question.  I am tying up these "coho flys" which are the ticket, I am told, for Sockeye, and now I understand why I am told not to tie them too thick.  If the fly is just gliding through their mouth (not true "bite") then the extra deer hair just gets in the way.  I assume these guys are fun to fight, making up for less than spectacular "takes".  I might end up spending a lot of time fishing for Dolly Varden and Cut throat.  Should be beautiful and fun in any case.
