I used to do sonar fisheries research in the upper Yukon and played with all kinds of sonar units.  Depth sounders made for boats will give you reasonably accurate measurements of river depth as long as you are traveling slow.  Yukon barges use this as a navigational aid but they're traveling pretty slow. You'll out run your readings a normal planning speeds in a river boat.  As far as the fish goes, you'll likely only detect fish on downward looking sonar if fish are at least a foot off the bottom, maybe more.  Most often salmon hug the bottom, so it's not a great fish locating device in rivers either.  Probably work better in lakes for resident species. Hope this helps.
