Depth sounders made for boats will give you reasonably accurate measurements of river depth as long as you are traveling slow. Yukon barges use this as a navigational aid but they're traveling pretty slow. You'll out run your readings a normal planning speeds in a river boat. As far as the fish goes, you'll likely only detect fish on downward looking sonar if fish are at least a foot off the bottom, maybe more. Most often salmon hug the bottom, so it's not a great fish locating device in rivers either. Probably work better in lakes for resident species. Hope this helps.
