They have less oil, so be careful not to overcook them. I usually season the flesh side of a fillet, grill it with the skin side next to the flame, when the skin starts turning black flip it over for a few more minutes. Easy and tasty. They have a milder taste. Kind of a combination between salmon and trout. Leftovers are great when used like tuna for sandwiches.
