Depending on the physical condition of your party is what i would use to make my choice. Taking on 8 people for a 3/4 day wilderness hike during the peak of salmon season is difficult at best.  Logistics of the trip will be pain enough i.e. food, water, pack size, fishing gear etc.......

Bushwacker also mentioned Petersville road and the creek which I left out as well as Kroto, and Moose Creeks all have road access and all have walking room with fishing tossed in.

The Kenai Trails are clearly marked and you will more than likley will never find more than a couple of people fishing the upper russian at any one time!  There are a lot of people who do not want to put the effort into getting off the road!  The Upper Russian would be the Logical Choice for ease and meeting your needs in my opinion! Chance of more people, but established trails and Camp Sites!

Peters Creek also easy access and decent fishing with good views of the Park on sunny days!  Water levels can be tricky after a couple of days of rain.

Chulitna System: Established Trails for Hiking optional rivers for fishing! Grand Views in the middle of the Alaskan Range, High Bear Population when the Salmon arrive, small streams / creeks most not more than a mile long from the parks to the Chulitna most have some population of Grayling, Dolly's and the occasional Rainbow Trout with three types of Salmon.  You will want to check the regs good!
