Smoking recipe

Here's my favorite, though i couldn't give you exact measurements. I basically do it to taste.

Soy sauce
brown sugar or honey
garlic
ginger
a little red wine
water to dilute
crushed red pepper for heat
black pepper

I mix this until it has a teriyaki like taste, marinate salmon for 12-24 hours, depending on how much you have to smoke. I like to use the big rubbermaid containers so i can get it all done in one shot.
Once it's marinated, pat dry it with papertowels and let sit for an hour or so, it will get a nice glossy look to it, then it's ready to smoke. I like to use apple or alder and burn about 2-3 pans per batch. Don't oversmoke it, i'd say about 8-10 hours depending on thickmess of filets. Good luck!
