Linda,
The open zodiac will serve you well in Seward & Homer .  You will be able to fish, get to the sea lions, otters, & other marine animals all within the boundries of Resurection Bay.  Out of Homer you can run to many different bays that will be protected & have more of the same including clamming if the tides are right.  You still may want to take a charter especially in Prince William sound when the weather makes it miserable to be out in the open boat. Also the fishing can be better farther out & obviously the zodic will go slower.
However, it is much better then the kayak & I wouldn't consider a canoe.  You will probably be safer than some of the boats you will see out there.  As someone else stated just make sure you have the coast guard required safety items, whistle-horn, flare of some sort, falgging etc ... all the items can be purchased locally up here in a small hard plastic orange cylinder case & a radio for weather & communication.
