pro's and con's

I had a similar dilemna on the boat I'm building, twin 60's vs single 115 and 9.9 kicker.  I went with the single for these reasons, lower installed cost, better fuel consumption, less drag, lower maintenance costs, lighter weight.

The advantage of twins is if one engine quits, then you're only down to 1/2 power vs coming in on the kicker.  The question is what is the likely cause of an engine failure.  The most likely thing to get you if fuel contamination, but unless you run two totally indepent fuel systems, and fuel up each tank at a different location, you're likely to have both engines fouled due to fuel problems.

If you want to be able to get back faster should you loose one engine, then twins are definately the way to go.  The price paid is higher initially, more fuel burnt, more oil changes, and a double whammy when you get them rebuilt.  If money isn't an issue, go with twins, if money is a concern, then consider how reliable modern o/b's are and that a good kicker provides a decent backup.
