My guess...

...based on an old 24ft Fiberform with a chevy 350, I would guess your buring 15gph .  I'd pick a higher number, but your cruising about 1000rpms less than my small block.  

That boat cruised at 24-26mph at 10-12gph burn rate.  That's with a brand new V/P engine and duoprop.  It would hit 33-35mph at 4500rpms, but I never ran it that hard, so don't know what kind of mileage it got at that speed.

For a planning hull the size your running, twins or a diesel would probably be a better set up.  Sounds like a nice boat though.
